Week 3- Italian Cream

I know, I know---I'm late!!

For our anniversary I made Italian Cream Cupcakes. Pretty yummy. I actually used a different recipe than what I had earlier posted. Incredibly Delicious Italian Cream Cake . SOOO GOOD! I was looking at the other recipe, and I'm not going to lie. For my 3rd week, its too intense. :)  This other recipe, was EASY!

I just made buttercream icing and sprinkled with chopped fresh Texas pecans and coconut.

Week 4 (really 5, but lets just say, I had a vacation..:) ) Strawberry and Cream Cupcakes. I'm doing a basic strawberry recipe with a pink buttercream (with real butter) ! SUPER YUMMY!! Double picture  day, tomorrow!  I hope everyone has a fabulous weekend!

Week 2

This weekend is my husband and I's 1st wedding anniversary. This week I was having a million ideas of what I wanted to do. I know great, week 2 and I'm already stumped a little. I came to the conculsion that I wanted something similar to our wedding cake. Yes- we will be eating our top tier, but I wanted to make something fresh for us to enjoy. I decided on Aunt Molly's Italian Cream Cupcakes. I don't think I'll do the coconut on top though..if I do, I'll toast it and maybe add some crumb on top, I'm not sure.  I have NEVER made Italian Cream Cupcakes before. I'm ridiculously excited to do this, yall!

4th of July

Alrighty! I did it..after two attempts...I was satisfied! I did my first decorating attempt with the wrong tip.

My inspiration:




I started with a Red Velvet Cake recipe. Typical Red Velvet Cake Recipe . This is very similar to something I used but I don't like mine nearly as red. I also added about 2 teaspoons of cinnamon and in half of the batter I did a 1/2 cup of chopped finely pecans. When I added the cinnamon and pecans to a regular chocolate cake I call it Texas Chocolate. If you're not a cinnamon person or pecans person, of course its not necessary, we just love it. :) Oh, and I also filled them with a little ameratto butter cream. Yummy!


I used a 18 tip to create my fireworks. I only needed one recipe of icing for all of my cupcakes. Well, each attempt, at least. In the inspiration picture, they used a totally different tip. I dont like the whole "hair" looking stuff so I did something on my own. And also, the more I look at them, they used the tube icing. I make my own, so its a different to work with.



I wish my camera was better and I could get better pictures..because now that I look at these, I almost don't want to post them. But, this is my first post, I think its necessary. (!)

I had some extra icing so I decided to stripe the bag and finish the other cupcakes off.

In the beginning..

Let me start from the beginning..



My name is Shannon and I'm from The Woodlands, TX (just north of Houston). I've always been interested in baking and creating fun and yummy things and now I'm putting it to good use. After much deliberation with my mom (whom I love, and I'm sure I'll mention practically everyday), I've decided to start a blog and document my journey through cupcakes. Every week I want to try something I haven't before. Sometimes it'll be the way their decorated and sometimes they'll be the cake itself. I'm very excited to get this started!!

THIS WEEK:
 I'm going to make Red Velvet + a little cinnamon and crushed pecans and filled with butter cream cupcakes..decorated like fireworks in honor of 4th of July!  (this cake is VERY similar to Texas Chocolate..which is your best chocolate cake recipe with cinnamon and pecans)
